A bone-in beef rib roast at 325 F takes 23 to 25 minutes per pound for medium-rare, so a 5 lb roast needs about 2 hours. Boneless rib roasts run longer, 28 to 33 minutes per pound, while a tenderloin at 425 F needs only 9 to 12. Finish by internal temperature, not the clock.

About this tool

Planning a Sunday roast or a holiday prime rib starts with one question: when does it go in the oven? This calculator takes the cut, the weight in pounds or kilograms and the doneness you want, and returns a roasting time built from the USDA minutes-per-pound chart. Alongside the time you get the chart's low-to-high range, the oven setting for that cut, the internal temperature at which to pull the roast, and how long to rest it while carryover heat finishes the job. The chart figures describe medium-rare; times for rare, medium and well done are scaled from them, so treat those as estimates. Oven calibration, a cold roast straight from the fridge and the shape of the joint all shift the real time, which is why a probe thermometer has the final word.

How to use it

  1. Pick the cut

Choose bone-in rib, boneless rib, eye of round or tenderloin. Each card shows the oven temperature the chart assumes.

  2. Enter the weight

Type the raw weight and switch the unit box between lb and kg.

  3. Choose doneness

Select rare through well done to scale the time and set the pull temperature.

  4. Read the plan

Use the total minutes, the chart range and the rest time to schedule the meal backwards from serving.

Examples

5 lb standing rib roast, medium-rare

Result Roasting time (minutes): 120
In hours: 2 h 0 min
Chart range: 1 h 55 min to 2 h 5 min
Oven temperature: 325 F (163 C)
Take it out at (internal): 130 F (54 C)
Rest: 15 min, to about 135 F

  1. Weight: 5 lb
  2. Rib roast, bone-in: 23 to 25 min/lb at 325 F, midpoint 24 min/lb
  3. Medium-rare factor 1: 24 min/lb
  4. Time = 5 x 24 = 120 min (2 h 0 min)

The USDA chart gives 23 to 25 minutes a pound at 325 F, so a 5 lb roast lands near two hours before resting.

Result Roasting time (minutes): 76
In hours: 1 h 16 min
Chart range: 1 h 13 min to 1 h 20 min
Oven temperature: 325 F (163 C)
Take it out at (internal): 140 F (60 C)
Rest: 15 min, to about 145 F

  1. Weight: 3.31 lb (1.5 kg x 2.20462)
  2. Eye of round: 20 to 22 min/lb at 325 F, midpoint 21 min/lb
  3. Medium factor 1.1: 23.1 min/lb
  4. Time = 3.31 x 23.1 = 76 min (1 h 16 min)

1.5 kg is 3.31 lb; at 21 min/lb with the medium factor of 1.1 the roast needs about an hour and a quarter.

How it is calculated

Time = weight (lb) × midpoint minutes per lb × doneness factor

weight
Raw roast weight; kilograms are converted at 2.20462 lb per kg
minutes per lb
Midpoint of the USDA chart range for the cut (for example 23 to 25 for bone-in rib)
doneness factor
0.9 rare, 1.0 medium-rare, 1.1 medium, 1.25 well done

The USDA roasting chart lists a minutes-per-pound band for each beef cut at a set oven temperature, aimed at medium-rare. The tool multiplies the weight by the middle of that band, then applies a doneness factor so a medium roast stays in about ten percent longer. The pull temperature sits roughly 5 F below the target because a large roast keeps rising while it rests under foil.

When not to use it

  • Reverse-sear or low-oven methods at 225 F follow a different time curve.
  • Smoked or sous-vide beef is timed by its own equipment, not an oven chart.
  • Ground beef loaves and stuffed rolled roasts need 160 F throughout.

Common mistakes

  • Weighing the roast after trimming the fat cap and bones off changes the time.
  • Roasting straight from the fridge adds 15 to 30 minutes to the chart time.
  • Skipping the rest lets juices run out and leaves the centre under target.
  • Trusting the clock instead of checking the thickest part with a thermometer.

Frequently asked questions

How long does a 3 lb beef roast take at 325 F?

It depends on the cut. A 3 lb eye of round at 20 to 22 minutes per pound needs roughly an hour for medium-rare, while a 3 lb boneless rib roast at 28 to 33 minutes per pound needs about an hour and a half.

Does a bone-in roast cook faster than boneless?

Per pound, yes. The USDA chart puts bone-in rib at 23 to 25 minutes per pound and boneless rib at 28 to 33. The bone conducts heat into the centre and part of the weight is bone rather than dense muscle.

Why is the tenderloin roasted at 425 F?

Tenderloin is long, thin and very lean. A hot oven browns the outside before the narrow centre overcooks, so the whole piece is done in 45 minutes to an hour instead of several hours.

What internal temperature should beef roast reach?

USDA guidance for whole cuts of beef is 145 F (63 C) followed by at least a 3 minute rest. Many cooks take rib roast out at 130 F for medium-rare and let carryover lift it to around 135 F.

How long should a beef roast rest?

About 15 minutes for a roast under 6 lb and 20 minutes for larger ones, loosely tented with foil. The internal temperature climbs a few degrees in that time and the juices settle back into the meat.

Can I use this for a frozen roast?

No. USDA notes that a roast cooked from frozen takes about 50 percent longer, and the outside can overcook before the centre thaws. Thaw it in the fridge first, allowing about a day per 4 to 5 lb.
