At 325 °F, the USDA puts an unstuffed 8 to 12 lb turkey at 2¾ to 3 hours, a 14 to 18 lb bird at 3¾ to 4¼ hours and a 20 to 24 lb bird at 4½ to 5 hours. Stuffed birds take longer. The turkey is done when the thigh, wing and breast read 165 °F.

About this tool

Anyone planning a holiday meal needs to know when the bird goes in the oven. Enter the turkey's weight in pounds or kilograms and say whether the cavity is stuffed, and the tool returns the roasting window from the USDA Food Safety and Inspection Service timetable for a 325 °F oven. It also gives the safe internal temperature and how many days a frozen bird needs in the refrigerator to thaw. The times are a planning range, not a finish signal: oven calibration, a cold start straight from the fridge, and roasting pans all shift the real time, so the thermometer reading decides when it comes out. The table covers whole birds from 8 to 24 lb; breasts and spatchcocked turkeys cook on different schedules.

How to use it

  1. Pick the weight unit

Choose pounds or kilograms to match the label on the turkey.

  2. Enter the weight

Use the weight on the package, between 8 and 24 lb (3.6 to 10.9 kg).

  3. Say if it is stuffed

Choose stuffed only when the stuffing cooks inside the cavity.

  4. Read the window

Start checking the temperature at the low end of the range and add rest time before carving.

Unstuffed

Result Roasting time at 325 °F: 2 h 45 min – 3 h
USDA weight band: 8 to 12 lb, unstuffed
Oven temperature: 325 °F (163 °C)
Safe internal temperature: 165 °F (74 °C)
Days to thaw in the fridge: 3

  1. Weight = 10 lb
  2. USDA band at 325 °F: 8 to 12 lb unstuffed → 2 h 45 min to 3 h
  3. Refrigerator thaw: 10 lb ÷ 4 lb per day, rounded up = 3 days
  4. Check with a thermometer: 165 °F in the thickest part of the thigh, innermost wing and breast

A small bird for six to eight people falls in the USDA 8 to 12 lb band, so plan on just under three hours plus resting.

Stuffed

Result Roasting time at 325 °F: 4 h – 4 h 15 min
USDA weight band: 14 to 18 lb, stuffed
Oven temperature: 325 °F (163 °C)
Safe internal temperature: 165 °F (74 °C)
Days to thaw in the fridge: 4

  1. Weight = 16 lb
  2. USDA band at 325 °F: 14 to 18 lb stuffed → 4 h to 4 h 15 min
  3. Refrigerator thaw: 16 lb ÷ 4 lb per day, rounded up = 4 days
  4. Check with a thermometer: 165 °F in the thickest part of the thigh, innermost wing and breast

Stuffing the cavity adds time in every band; here the bird needs four hours or a little more, and the stuffing centre must hit 165 °F too.

Unstuffed

Result Roasting time at 325 °F: 4 h 15 min – 4 h 30 min
USDA weight band: 18 to 20 lb, unstuffed
Oven temperature: 325 °F (163 °C)
Safe internal temperature: 165 °F (74 °C)
Days to thaw in the fridge: 5

  1. Weight = 19.84 lb (9 kg ÷ 0.45359237)
  2. USDA band at 325 °F: 18 to 20 lb unstuffed → 4 h 15 min to 4 h 30 min
  3. Refrigerator thaw: 19.84 lb ÷ 4 lb per day, rounded up = 5 days
  4. Check with a thermometer: 165 °F in the thickest part of the thigh, innermost wing and breast

9 kg is about 19.8 lb, which lands in the 18 to 20 lb band: 4¼ to 4½ hours at 325 °F.

How it is calculated

time range = USDA band(weight in lb, stuffed or unstuffed); thaw days = ceil(lb ÷ 4)

lb
Turkey weight in pounds (kg ÷ 0.45359237)
band
USDA FSIS weight band at 325 °F: 8–12, 12–14, 14–18, 18–20 or 20–24 lb
thaw days
About 24 hours in the refrigerator for every 4 to 5 lb

The weight is converted to pounds and placed in the matching USDA band; a weight on a boundary, such as 12 lb, uses the lower band. Each band has a published low and high time for an oven held at 325 °F, separate for stuffed and unstuffed birds. Thaw days use the conservative 4 lb per day figure and round up.

When not to use it

  • Turkey breasts, legs or spatchcocked birds follow different timetables.
  • Deep-fried, smoked or convection-roasted turkeys cook much faster or slower than 325 °F oven times.
  • Birds under 8 lb or over 24 lb are outside the USDA table.

Common mistakes

  • Pulling the bird at the time shown without checking 165 °F in the thigh.
  • Roasting a turkey that is still partly frozen, which adds roughly half again to the time.
  • Forgetting the 20 to 30 minute rest before carving when timing the meal.

Frequently asked questions

What temperature should the oven be for a whole turkey?

The USDA timetable assumes 325 °F (163 °C). Lower settings are not recommended for safety, and higher settings shorten the time but dry the breast before the thighs finish.

How do I know the turkey is done?

Use a food thermometer. The thickest part of the thigh, the innermost part of the wing and the thickest part of the breast should all reach 165 °F (74 °C). The clock only tells you when to start checking.

Why does a stuffed turkey take longer?

Stuffing packed in the cavity is dense and starts cold, so heat reaches the centre slowly. The stuffing itself must reach 165 °F, which keeps the bird in the oven 15 to 30 minutes longer per band.

How long does a frozen turkey take to thaw in the fridge?

The USDA allows about 24 hours for every 4 to 5 pounds in a refrigerator at 40 °F or below. A 16 lb bird needs about four days, so it should move from freezer to fridge the weekend before a Thursday meal.

Can I cook a turkey from frozen?

Yes, it is safe, but the USDA says it takes at least 50 percent longer than a thawed bird, and the giblet bag has to be pulled out partway through with tongs.

How long should the turkey rest before carving?

Let it stand about 20 minutes after it leaves the oven. The juices settle and carving is easier; a large bird stays hot for 30 minutes or more under loose foil.
