At 325 °F (163 °C), an unstuffed 16 lb turkey roasts for 3 hours 45 minutes to 4 hours 15 minutes, according to the USDA timetable. A stuffed bird of the same size needs 4 hours to 4 hours 15 minutes. Either way, it is done only when a thermometer reads 165 °F in the thigh, wing and breast.

About this tool

Anyone hosting a holiday dinner has to work backwards from the moment the turkey hits the table: when to start thawing, when the oven goes on, and how long the bird rests. This calculator takes the weight of a whole turkey in pounds or kilograms and whether it is stuffed, finds the matching row of the USDA Food Safety and Inspection Service roasting timetable for a 325 °F oven, and returns the time range. It also gives the days needed to thaw in the refrigerator, the hours needed in cold water, and the resting time before carving. The timetable covers birds from 8 to 24 lb; turkey breasts, spatchcocked birds, smokers, fryers and convection ovens cook on different schedules and are outside its scope.

How to use it

  1. Enter the weight

Type the weight from the label of the whole bird, then pick lb or kg in the unit box inside the field.

  2. Choose stuffed or unstuffed

Pick Stuffed only if bread stuffing goes into the cavity; aromatics such as onion or herbs count as unstuffed.

  3. Read the plan

The roasting range, both thaw times and the rest period update as you type, with the working shown underneath.

Result Roasting time at 325 °F (163 °C): 3 hr 45 min – 4 hr 15 min
Weight in pounds: 16
Thawing in the refrigerator: 4 days
Thawing in cold water: 8 hr
Rest before carving: 20 – 30 min

  1. 16 lb falls in the USDA 14 to 18 lb row (unstuffed, 325 °F oven)
  2. Roasting time = 3 hr 45 min to 4 hr 15 min
  3. Refrigerator thaw = 16 lb ÷ 4 lb per day, rounded up = 4 days
  4. Cold-water thaw = 16 lb × 30 min = 8 hr

A common Thanksgiving size. Plan four days of refrigerator thawing and about four hours in the oven, then a rest before carving.

Result Roasting time at 325 °F (163 °C): 3 hr – 3 hr 30 min
Weight in pounds: 10
Thawing in the refrigerator: 3 days
Thawing in cold water: 5 hr
Rest before carving: 20 – 30 min

  1. 10 lb falls in the USDA 8 to 12 lb row (stuffed, 325 °F oven)
  2. Roasting time = 3 hr to 3 hr 30 min
  3. Refrigerator thaw = 10 lb ÷ 4 lb per day, rounded up = 3 days
  4. Cold-water thaw = 10 lb × 30 min = 5 hr

Stuffing slows the heat reaching the centre, so a small stuffed bird needs up to half an hour more than an empty one.

Unstuffed

Result Roasting time at 325 °F (163 °C): 4 hr 30 min – 5 hr
Weight in pounds: 22
Thawing in the refrigerator: 6 days
Thawing in cold water: 11 hr 2 min
Rest before carving: 20 – 30 min

  1. 10 kg ÷ 0.45359237 = 22 lb
  2. 22 lb falls in the USDA 20 to 24 lb row (unstuffed, 325 °F oven)
  3. Roasting time = 4 hr 30 min to 5 hr
  4. Refrigerator thaw = 22 lb ÷ 4 lb per day, rounded up = 6 days
  5. Cold-water thaw = 22 lb × 30 min = 11 hr 2 min

10 kg is about 22 lb, which sits in the 20 to 24 lb row of the USDA timetable.

How it is calculated

roasting time = USDA timetable row for the weight in lb; fridge thaw days = ⌈lb ÷ 4⌉; cold-water thaw = lb × 30 min

lb
Turkey weight in pounds (kg ÷ 0.45359237)
row
8–12, 12–14, 14–18, 18–20 or 20–24 lb band, stuffed or unstuffed
⌈ ⌉
Round up to the next whole day

The USDA does not publish a per-pound formula for roasting; it publishes a table of weight bands with a time range for each, measured in a 325 °F oven with the bird breast-up in a shallow pan. The tool converts kilograms to pounds, finds the band, and reports its range. Thawing uses the USDA rules of one day in the refrigerator for every 4 to 5 lb (the tool uses 4 lb, the slower case) and 30 minutes per pound in cold water changed every half hour.

When not to use it

  • Do not use it for a boneless roast or a bone-in turkey breast, which have their own shorter times.
  • It does not apply to deep-fried, smoked, grilled or spatchcocked turkey.
  • Birds heavier than 24 lb are outside the USDA table this tool reads.
  • Convection ovens usually finish 25 to 30 percent sooner than these figures.

Common mistakes

  • Entering the weight of a still-frozen bird and starting the clock before it has fully thawed.
  • Taking the end of the time range as proof of doneness instead of checking 165 °F with a thermometer.
  • Forgetting that the stuffing centre must also reach 165 °F before serving.
  • Carving straight from the oven instead of resting the bird for 20 to 30 minutes.

Frequently asked questions

How long does a 20 lb turkey take to roast?

A 20 lb bird sits at the top of the USDA 18 to 20 lb row: 4¼ to 4½ hours unstuffed, or 4¼ to 4¾ hours stuffed, at 325 °F. Start checking the thigh temperature at the low end of the range.

What internal temperature means the turkey is done?

The USDA sets 165 °F (74 °C), measured with a food thermometer in the thickest part of the thigh, the innermost part of the wing and the thickest part of the breast. Stuffing must reach the same temperature.

Why does a stuffed turkey take longer?

Dense, moist stuffing in the cavity insulates the inside of the bird and must itself reach 165 °F. The extra mass slows heating, which is why the USDA stuffed rows run up to about half an hour longer.

How many days does a turkey take to thaw in the fridge?

Allow about 24 hours for every 4 to 5 lb at 40 °F or below. The calculator uses 4 lb per day and rounds up, so a 16 lb bird gets 4 days. A thawed turkey keeps a further 1 to 2 days in the refrigerator.

Can I thaw a turkey in cold water instead?

Yes. Submerge it in its leak-proof wrapping, change the water every 30 minutes, and allow 30 minutes per pound. A 16 lb turkey needs about 8 hours, and it must be cooked as soon as it has thawed.

Can I roast a turkey that is still frozen?

The USDA says it is safe to cook a turkey from frozen, but it takes at least 50 percent longer than the times shown here, and the giblet pack has to be pulled out partway through. This calculator assumes a thawed bird.

Why let the turkey rest before carving?

A 20 to 30 minute rest lets juices settle back into the meat, so less runs onto the board, and makes slicing cleaner. Cover the bird loosely with foil while it rests.
